Abstract

Objective of the manual for the use of the "Photographic Atlas of Standardized Food and Beverages".

This manual was developed to support the virtual application of the "24-hour recall survey multi-step method" and the "NOVA tracker of 27 UPF categories".

Sources of information for the construction of the atlas

Four sources of information were used for the construction of the photographic atlas of standardized foods and beverages:

  • the "Photographic catalog as a tool for estimating dietary intake in children and adults" prepared by Chumbi and Vásquez, (1)
  • the "Photographic Atlas" of the Aliméntate Ecuador program of the Ministry of Economic and Social Inclusion, (2)
    (3) photos of ultra-processed products without identification of origin and
  • the "Encuesta Nacional de Salud y Nutrición de la Población Ecuatoriana de Cero a 59 Años. ENSANUT 2012", chapter on consumption survey (3).

The "Photographic Catalog" published by Chumbi and Vasquez (1) and the "Photographic Atlas" published by Aliméntate Ecuador (2) were designed to collect quantified food consumption information with face-to-face interviews. In both cases, food was recorded in portions, assigning codes that differentiate each food and portion thereof, in terms of volume and quantity in grams and/or milliliters.

Because the "Photographic Catalog" of Chumbi and Vásquez (1) and the Atlas of Aliméntate Ecuador (2) do not record the category of ultra-processed products that are part of the diet consumed by the population. It was decided to add to the Atlas of photos of ultra-processed foods and beverages, beverages and foods without identification of origin. Once the photos from these three sources were selected, they were grouped into five categories, 65 subcategories and 118 portions.
