The Table of Chemical Composition of Foods: Based on Nutrients of Interest to the Ecuadorian Population, presents information on more than a thousand locally used foods and includes values for energy, fiber, macronutrients such as carbohydrates, proteins, total fats (including cholesterol, saturated fatty acids, monounsaturated fatty acids and polyunsaturated fatty acids), and the critical micronutrients for the Ecuadorian population, minerals (Calcium, Phosphorus, Iron, Potassium, Sodium, Zinc) and vitamins (Vitamin C, Vitamin A, Folate, Vitamin B12) expressed in 100 g of edible portion, including beverages and other liquids expressed in 100 ml of edible portion.
