Resumen

La cascarilla de los granos de cacao es un residuo abundante que suele descartarse a pesar de su contenido valioso de compuestos bioactivos. Este trabajo desarrolla un proceso sostenible, guiado por principios de ingeniería circular, para obtener polifenoles en polvo mediante extracción y secado. El estudio se centró en identificar condiciones operativas que permitan maximizar la recuperación de polifenoles, reducir el consumo de recursos y garantizar la estabilidad del producto final. Los resultados muestran que el proceso propuesto permite obtener un polvo rico en compuestos polifenólicos, con propiedades funcionales adecuadas para su integración en productos cosméticos. La propuesta demuestra que es posible transformar un residuo agroindustrial en un ingrediente de alto valor y alineadas con la demanda de alternativas sostenibles en la industria cosmética.
